Cupcakes
Cupcakes are a staple of my baking repertoire.
I use the same receipe for all the cupcakes I make and especially if I am doing large batches of them.
I weigh the eggs and use that as the weight of the butter, sugar and flour. I will take a bit out if I am doing a chocolate cupcake and I always include some vanilla, even if I am doing a flavoured cupcake like lemon or caramel. I think it just enhances the overall flavour.
For the icing, I tend to use buttercream but I do also use cream cheese (which is a particular favourite of mine). For making my icing, I tend to do double the weight of the butter for the icing sugar. Then I just add whichever decorations catch my eye.
